I am back at one of my most favorite chilling out spots again, bringing *Katherine there for her birthday celebration, catching up and chilling out session. The Lantern Bar at Fullerton Bay Hotel has been an allure for me since the day it opened, and even until now it still appeals greatly to me. Read about a couple of my previous visits here and here.
The views were still seductive, and the ambience was still alluring; the only thing I wish wouldn't remain consistent was the service (while polite, it was hard to get their attention no matter which part of Lantern we sat at).
*Katherine started with a Fizz and Bubbles cocktail (SGD$24.00) comprising of vodka, orange liqueur, fresh lime juice, cane syrup and champagne, giving the drink a bubbly refreshingness as the name promised, as well as a citrusy dose of sweetness.
I had my Classic Mojito (SGD$24.00) with rum, fresh mint, la perruche, brown sugar, club sugar and bitters. I love this drink, saccharine balanced with the right amount of mint. I was grateful that it was rather a tall glass, fulfilling my craving for Mojitos.
Food-wise, we began with the Truffle Potato Salad (SGD$12.00) which boosted of soft-boiled potato cubes tossed in truffle-infused dressing, tantalising the palate with its piquant aroma while the teeth made contact with the smooth potato cubes.
Next, the Cajun Tuna Spring Rolls (SGD$24.00), served with togarashi aioli. We were expecting mashed tuna stuffings within the crackling spring roll skins, but we were very pleasantly surprised to discover entire slabs of smoked tuna texturized between sashimi and smoked fish. This was definitely a keeper for us.
Finally, a Pizza Slab (SGD$31.00); we chose the one that comprised of forest mushrooms, sundried tomatoes, ricotta cheese and sprigs of fresh baby spinach. The crust was crispy and biscuit-like, the way I remember it, while the ingredients brought out all the various umami and sweet flavours naturally.
Lantern Bar surprised *Katherine with a very luscious and rich Chocolate Cake - there was a crunchy base and a creamy mousse body to this elegant dessert topped with fresh berries.
We concluded the evening with drink each. I had a glass of Pinot Noir (SGD$23.00), which had a sleek texture and light note. *Katherine chose the Classic Margarita (SGD$24.00) that was a burst of flavours - sweet, sour and salty from the sodium-rimmed glass.
Another great night passed by, with equally fantastic music to soothe the ears and laser shows livening up the enchanting night scene.
